OPEN for ingredients! This is Moonlight Hor Fun noodles, quite simply fried rice noodles served with a raw egg yolk mixed in right at the end. The result is a creamy, silky plate of noodles. Think of it as carbonara, but better because the noodles are fried first for a smoky, 'wok hei' flavour.

Although a hawker dish, Moonlight Hor Fun is actually not too common in Singapore. The main reason is definitely the fact that it is served with a raw egg - most are iffy with the idea of eating with raw eggs. Use pasteurised eggs to ensure safer eggs that can be consumed raw.

If you cannot already infer, the raw egg refers to the moonlight in its ~romantic~ name.

Ingredients:
- 200g Hor Fun
- 1 tsp Dark Soy Sauce
- 100g Beef Slices, sliced thinly
- 50g Prawns, deveined
- 1 tsp Minced Garlic
- A handful Chives or Spring Onions
- 4-5 stalks Bok Choy
- 1/4 cup Water or Chicken Stock
- 1 Egg Yolk
- 2-3 tbsps Cooking Oil

Seasoning Sauce:
- 1 tsp Dark Soy Sauce
- 1 tsp Light Soy Sauce
- 1 tsp Oyster Sauce
- 1/2 tsp Fish Sauce
