AD | Beat the Chef is BACK. And this time Baz is taking on Chef Ebbers in a Mystery Box Challenge that celebrates the humble rice grain.

To swot up on their rice knowledge, we sent them both to learn from a rice farmer and rice breeder in Italy. BASF’s agriculture experts helped to explain just how much work grows into creating the grain we so often take for granted! So, whose dish will best celebrate everything they learnt in the paddy fields? Who will take the win on this occasion…?

I saw a really interesting video "Louisiana Crawfish and Rice Farm .." where they used crawfish to control pests in the rice fields and harvested the crawfish every other year. Essentially getting two crops out of one field and saving on pesticides.

I work in crop modeling research (using computer programs to simulate crop growth, development, and environmental impacts under different environmental conditions and management practices). One of the goals of my field is to figure out which traits are needed under future climate conditions, so that breeders can get working on creating those new cultivars now. The 6-8 year timeframe mentioned in this video is actually pretty fast turnover for a new variety. Depending on the species and the breeding techniques used, you could easily be looking at a 10+ year breeding cycle. It's the reason why the biggest form of industrial espionage in the ag industry is seed theft.

When Ebbers goes all out its always an amazing Dish. That Puree alone makes my mouth water with that Vibrant Colour and the Flavours jammed into it. Also mad respect for going Italian to celebrate rice! 99% of people would immediatly go to China, Japan or India thinking about rice <3

“I’ve got a rice cracker boys!” He squealed.

Barry kept cool, though he wanted to scream,
with his rice-shaped rice cake with a nice dollop of rice ice cream.

Would love to see a challenge where we see the normals buy ingredients on their own and make a dish without help from the food team. I think that would be fun

Melissa is amazing! She is so smart and thoughtful. I would very like to thank Ebs.
Had a party to prepare in 2hrs yesterday. When I was cooking I could hear Benjamins voice in my head "...clear as you go" what really helped to keep myself organized

These are 2 of the best looking plates of food that have come out of a challenge as long as I can remember. Talk about respecting the ingredient and the region. Love the dishes.

I know it is not everyone's cup of tea, but I adore learning how different food industries around the globe are adapting and researching to get the most out of very little. This is something we will all have to do in the coming decades - or at least you all will, as my time is maybe a decade left.

Ben's dish looks so vibrant and inviting, if you order that in a restaurant, you know you'll get your money's worth.

While Barry's dessert will immediately intrigues you if someone introduced it as their special seasonal dessert of the day and I would definitely want to give it a try too. Who wouldn't be curious with Rice Ice Cream....
