Kibbeh with Cheese & Veggies

INGREDIENTS:
For the kibbeh dough:
2 cups fine brown bulgur washed and soaked in one cup boiling water.
1 Large potato, boiled then peeled
1 Tbsp Kibbe spices
4 Tbsp Vegetable oil
4 Tbsp Corn flour
Salt to taste
For the filling:
500g minced beef
1 green & 1 red bell pepper (chopped)
1 cup chopped mushrooms
1 Onion, Chopped
2 Garlic cloves, minced
1 tsp thyme
½ tsp Paprika
½ tsp Cumin
Salt and pepper to taste
1 cup cubed Kraft block cheese (250g pack)
¼ cup Vegetable oil and olive oil
DIRECTIONS
PREPARE THE DOUGH:
In a food processor, or in a bowl, add the bulgur.
Mash or grate the potato and add it to the bulgur.
Add the corn flour, oil and spices
Mix well with your hand till you get a very smooth dough.
Cover and set aside
NOW PREPARE THE FILLING:
In a pan with some oil add the onion and garlic .
Then add the beef and cook till its all brown.
Add the peppers and mushroom and cook.
Add the slices and give it a good mix.
In baking dish add some oil.
Put half the kibbe dough and spread it evenly on the bottom.
Add the filling
Add the cubed Kraft Block Cheese
Cover with the remaing dough.
Seal the sides well.
Pour ¼ cup mixed vegetable oil and olive oil
Bake at 350 for 20 minutes. And broil the top till golden.
