My initial thought is that this drink would be very acidic from the espresso and fruit juice. But you are a coffee expert, so I'd have to try it to see what's going on in there! Such an interesting twist on the coffee canon.

Pineapple and Coffee is such an underrated flavour pairing. This strikes me as very close to a non alcoholic version of Martin Hudaks “Espresso Martiki” cocktail 😊
