Ailsa's low-waste banana muffins are a great lunch box option, or a delicious afternoon treat. Give them a go with the recipe detailed below.
Banana peel muffins
Makes 12
Prep – 15 minutes
Cook – 30 minutes
Ingredients
3 peel-on bananas, around 400g, frozen or fresh
125ml rapeseed oil
2 eggs
400g plain flour
200g caster sugar
2 tsp baking powder
1 tsp bicarbonate of soda
1 tsp ground cinnamon
1 tsp vanilla extract
200g chocolate chips
Method
1. If using frozen bananas, remove them from the freezer to defrost. Heat the oven to 180C/160C fan/gas 4. Line a 12-hole muffin tin with paper or silicone cases. When ready to bake, trim the ends of the bananas and discard. Roughly chop the remaining into rounds and tip into a food processor along with the oil and eggs. Blitz for 1-2 mins until finely chopped and set aside.
2. Combine the flour, sugar, baking powder, bicarb, cinnamon, and 1 tsp salt in a bowl. Stir the blitzed banana mixture in with the vanilla extract until no dry spots remain and finally stir in the chocolate chips. Divide between the cases and bake for 25-30 mins, until golden, risen and a skewer inserted into the centre comes out clean. Leave to cool on a wire rack. Will keep in an airtight container for up to 4 days.
