The trick is to deliberately under adjust and then you can slowly click the last one or two.

If you're finding that difficult to set your dive timer bezel, I strongly recommend you don't use it to go diving.

Honestly, this feature is helpful in everyday life, especially family life with kids. It's kind of a freeing feeling to not have to take out your phone for simple timekeeping.
