The watcher is perhaps one of the most powerful beings in the MCU, able to go toe to toe with a supremely powerful version of Ultron. In the MCU, it has not yet been explained why he does not interfere in the events of mortals and even in the comics, the explanations are brief. According to one comic, the watchers did once interfere, gifting advanced technology to a race known as the procilloans. Subsequently, this species went on to destroy themselves and so the watchers made an oath to never interfere again.

My personal head canon is it would be boring. As in for them it would also be boring for the reader/viewer as well for the same reason. They are way to powerful, they would win by default. It’s more entertaining to watch an event you could fix or win or whatever in a second then it is to actually fix or win or whatever.
