⅓ cup vegan mayo
¼ cup celery finely chopped
2 tablespoon dill finely chopped
2 tablespoons chives finely chopped
1 tablespoon apple cider vinegar
½ tablespoon mustard Dijon or yellow
1 small garlic clove finely grated
1 teaspoon salt
2 twists black pepper freshly ground
½ teaspoon turmeric powder
¼ teaspoon black salt (kala namak) optional but recommended to get that eggy taste
8 to 10 ounces tofu firm or extra firm

We make something like this often, but cutting the tofu like that is nice touch, may give it a try next time we have guests!

I made something very similar. It's really delicious.
Celery is so important in this salad in my opinion.

I make my own tahini-mayonnaise for the salad, I add tofu (but I boil it in water - at least for my tofu it brings the texture closer to egg whites) to mimic egg whites and mashed chickpeas with nooch to mimic egg yolks.

Sometimes I add soy milk with seasoning thickened with agar agar just to give it even more texture variation.

Don't you have to sauté the tofu a little bit first though. I never eat my tofu raw.
