✨ 456 Calorie Crispy Chicken Caesar Salad ✨ Plus, it has 54.4g of Protein!

1 Chicken Breast, mine was 120g, butterflied.
20g Plain Cornflakes
1 Egg, beaten
1/2tsp each of garlic powder, paprika, dried mixed herbs & salt
40g 0% fat Greek style yoghurt
10g freshly grated Parmesan
40ml reduced fat Caesar dressing
1 head of Gem lettuce, sliced
20g pre-made Croutons

To a bowl add your egg & spices and mix until well combined.

To a small plate add your cornflakes, crush with the bench of your hand until you have a mix of fine crumbs and larger pieces.

Dip your chicken into your beaten egg then into the cornflakes; gently press the cornflakes into the chicken to make sure they stick.

Add to your air fryer, spray the chicken well with some cooking spray (or brush with a little oil) and air fry at 190c for around 10 minutes, or until the chicken is cooked through.

While the chicken is cooking combine your yoghurt, dressing and grated Parmesan in a bowl before adding in your lettuce & croutons.

Then you simply need to plate: add your salad to a large bowl, top with your cooked chicken and some extra parmesan if you’d like, then enjoy!
