Tomato jam

Jam can be very iffy! If it doesn’t thicken, you can add more pectin or sugar and simmer a little longer!

If you don’t want to use pectin just let it simmer until it thickens to a jam like consistency! Usually takes about 1-2 hours!

Of it still seems liquify after placing in the jar just wait the full 24 hours to see if it sets! If not you can place back into a pan and try to boil again until thickened!

Ingredients
20 tomatoes or about 3 cups crushed tomatoes
2 cups brown sugar
1 cup granulated sugar or 2 if you want extra sweet
1 lemon rind
1 package liquid pectin
Zest of lemon
1 jalapeño
Nutmeg 1/4 teaspoon
Cinnamon 1 teaspoon
Aleppo pepper 1 teaspoon
Pinch of clove

How to -
Prep your tomatoes -
Bring a pot of water to a boil, drop in your tomatoes for 30 seconds, once the skin starts to peel back, plop into an ice bath, remove skin completely.

Chop your tomatoes and jalapeño.

Place tomatoes and jalapeño into pan on medium heat, give them a chop and cook for 20 minutes on medium heat.

Add your sugars, zest, lemon rind, cinnamon, Aleppo pepper, nutmeg and clove. Simmer 10 minutes!

After 10 minutes, add liquid pectin and simmer for an additional 20 minutes.

Cool and ladle into a clean jar. Let come down to room temperature before sealing and placing into the fridge.

Consume within 1-2 weeks unless you’re canning!

Apple peels are loaded with pectin. That's why you see a curl of peel in handmade jellies and jams. Helps them set right up.

I make mine with red pepper flakes, and a lot of fresh ginger for a kick. Might have to give jalapeños a try this year too. Got lots of tomatoes and peppers growing.

I use whole Roma tomatoes in tomato jam. Never peel tomatoes for tomato jam ….tastes great saves time

why cinamon? i make today tomato jam with garlic, basil oregano, chili, another condiments and 2 jars of handmade concentrate tomate souce maybe a litle vinegar.
