This Healthy Mediterranean Chicken Bowl is so fun and easy to make. Did I mention how delicious it is? Better than your Cava Mediterranean Bowl and made all at home! This protein packed bowl may seem like a lot of ingredients, but with the help of the air fryer, rice cooker and instant pot, you’ll have this bowl prepared in no time! Perfect for lunch, dinner and meal prep. The colorful veggies and rice makes it so exciting and enjoyable to eat.

Ingredients for Rice:
- 2 cups Jasmin Rice
- Olive Oil
- Salt
- 1 tbsp of turmeric powder
- 1 tbsp of ginger powder
- 1 tbsp of minced garlic
- 10 drops of oregano oil (optional)
- 1 tbsp of cumin
- 2 cups of chicken broth
Instructions for Rice:
1) Wash rice three or more times until water is mostly clear.
2) Add drizzle olive oil, salt, turmeric, ginger, garlic, oregano oil, cumin, and chicken broth to line two.
3) Mix well.
4) Add to rice cooker and cook on the plain rice setting.
5) Fluff well after rice finishes cooking.
Ingredients for Rotisserie Chicken:
- Lemon
- Garlic cloves
- White or yellow onion
- Fresh thyme
- Fresh rosemary
- Olive oil
- Green onion
- Black pepper
- Salt
- Garlic powder
- Whole Chicken (Mine was 5.5 lbs.)
- 1-2 cups of chicken broth (or vegetable broth/water)
Instructions for Rotisserie Chicken:
1) Wash and pat dry chicken. I cut the chicken in half since the whole chicken didn’t fit in the Instant Pot.
2) For the marinade, add finely chopped thyme and rosemary, olive oil, half a squeezed lemon, garlic powder, salt and black pepper.
3) Coat the chicken with the marinade.
4) On saute setting, sear the chicken breast down in the Instant Pot for 5-6 minutes until golden brown.
5) Take out the chicken and let it rest.
6) Add a rack on the bottom of the Instant Pot. Add the chicken broth.
7) Layer the sliced lemon, onion, chicken, garlic cloves, green onion, and the rest of marinade on top of chicken.
8) Cook 6 minutes for every pound & 6 minutes for additional ½ pound. 35 minutes total in high pressure cooking setting in the Instant Pot. Release the natural steam after 20 minutes of cooking.
9) Let chicken rest for 10 minutes before taking it out. You can shred or cut into cubes.
10) TIP: Save the chicken broth! It can be used for cooking rice, another soup, or just chicken bone broth! 😊

- Sliced Green or black olives
- Chopped Red Onion
- Sliced Grape Tomatoes
- Hummus
- Sumac (Optional)
- Avocado
- Zucchini (Toss with olive oil, salt, garlic powder and pepper. Air fry at 370 degrees for 12 minutes)
- Sweet Potatoes (Toss with olive oil, salt, garlic powder and pepper. Air fry at 380 degrees for 14 minutes)
