This is so close to answering my question, yet so, so far.
The MacOS installer had a failed install and I want to revert to the previous condition. It created APFS volumes moving the Data to the 'Data' "Volume" and also, somehow, making this invisible in the Finder (although all the old aliases work). Can I just delete the APFS "Volume" (NOT Volume group as in this video)? There are also volumes in the group not visible in Disk Utility but shown via "diskutil list". The whole thing is clear as mud as how to recover from this situation. Apple just wants me to delete the entire drive which is unacceptable.
