For the Sauce
1 medium can of diced tomatoes (1 1/2 cups) (I use garlic and herb Italian.)
1⁄3 medium onion (I use Spanish or red.)
4 cloves garlic
1⁄2 medium green bell pepper
1 medium Jalapeño pepper
1⁄2 cup fresh basil
1⁄2 cup fresh parsley
1⁄4 cup olive oil
For the Picadillo
1 tablespoon olive oil for frying
1⁄2 small finely chopped onion
3 cloves garlic finely chopped
1⁄2 medium finely chopped red bell pepper
2 medium bay leaves
1 teaspoon cumin
1 teaspoon paprika
1 teaspoon oregano
1⁄2 teaspoon white pepper (or 1 tsp of black)
1 teaspoon salt
3 tablespoons tomato paste
1 pound lean ground beef
1⁄2 cup green olives
2 tablespoons brine from olives
2 tablespoons capers
