The point of using bitter ingredients is to balance the sweetness of the marsala wine and umami from the chicken.

If you cannot find red endives use another bitter vegetable:
Endive (white)
Radicchio
Escarole
Arugula
Spinach
Broccoli Rabe
Kale (including Dinosaur Kale, Lacinato Kale)
Dandelion Greens

this is incredibly easy to make and tastes awesome... I made one change, I replaced the butter with a table spoon of sour cream which I found to freshen up the dish and complement the sweetness of the marsala with a nice creamy sauce.

In the States, the type of chicory he is using is actually a common chicory called Radicchio but he is using a special variety of it that is shaped like Belgian Endive but is not.  Radicchio is easy to find but maybe not this variety.  Will be checking Harris Teeter, which might sell it.

for anyone who doesn't know what kind of marsala wine he use, he is using Pellegrino Marsala Sweet wine.
 And the vegetable is Endive in American English.
