What's the difference between heavy cream and whipping cream?
In a word, fat. Heavy cream has a higher fat content than whipping cream. All cream contains at least 30% milk fat but heavy cream must be at least 36% milk fat, and some premium brands contain as much as 40%.

Good trivia, right? But what does all of that mean when you're cooking? A higher percentage of fat means a thicker, less watery cream which is usually better for cooking because it will thicken quicker when simmered. Both creams can be whipped, but because whipping cream has less fat, it’s got a lighter, more billowy texture. It will also deflate faster than heavy cream, so if you’d like to frost a cake or pipe decorations, heavy cream will stay stiffer longer. In the end, don’t stress about which one you’re using. We tend to buy heavy cream because we think it’s a better all-purpose product, but both will work just fine if you’re in a pinch!

Thank you so much. It's hard to try a foreign recipe when you can't get a specific product and people on boards or blogs don't always answer with proper alternatives. I'm sure I can find cream with a higher milk fat percentage. Just had to know what to look for.

Nice video...but over here in the uk our whipping cream is 38% fat so it gets confusing. Our double cream is 48%.
My question is I am making a vanilla ice cream and need a creamy texture but dont want to smother the vanilla flavour...so which cream should I use? Thanks
