It's very weird as a Brazilian see someone cooking a Jaca here we most eat it raw my mother and grandmother talk abolt eating the seed after cooking it but on mi 34 years i never saw someone doing it, the mesh like you said we call it pivide we just trow it on the garbage as we do with the center and the shell, ahh and here we have 2 types the hard one like you used on video and the soft one much more sweet but i belive it's not a easy task to transport it because the shell is very soft too.

Jackfruit is so versitale. Rare that you can find a fruit so sweet uncooked, but will stand up to extensive stewing. Shreds great for chicken replacement. Absolutely my favorite!
