The dome structure is for an optical Telescope to track the Starship while flying to orbit.

The eighth is the last section and then we will be able to see the whole launch tower complete.
Its so much fun watching spacex develop Starbase so quickly

12:20 looks like an observatory, maybe a shell for a powerfull trackingcam or other optical equipment...

Thanks for allowing me the opportunity to get another amazing screen shot at the start of this video.

Honestly, I'm glad to see the frequency of "unknown deliveries" increase. That tells me that SpaceX is moving past the construction of the obvious stuff, like tents, towers, launchpads, tanks and piping. Now, they're moving on to stuff that is less obvious, yet just as important to realizing the operational requirements of a fully functioning starbase. One thing for certain, it'll be fun to listen to all the speculation.

"unknown structure" is a telescope roof for extra large lens / video camera to visually track the flying hardware

I suspect that domed mystery structure near the end of the video is a housing for a launch tracking camera/telescope and it's advanced tracking drive and vibration damping technoloty. There is usually a pair of these structures. They are very similar to those NASA uses at Cape Kennedy near launch pads 39A and 39B

I'm guessing all those "unknown structures" are parts of the main rotating section for the top of the launch tower crane assembly.

The unknown dome structure with the tracks on the outside is a telescope shield dome much like the ones used at ground based astronomical observatories.
This will likely house long range tracking cameras not a telescope. The dome is to shield the gear from rain ect when it's not launch day.

There are similar ones at the NASA pads at KSC
