Hey there, a real rise of kingdoms player here. Will just correct you for a minute, the civilization Germany in rok is specialized on cavalry. Also known as Teutonic Knight. It increases your cavalry attack by 5%, troop training speed by 10% and action point recovery, even though your not gonna play rise of kingdoms, if you are well you should start with china civilization cause the buff are massively helpful especially the 5% Building speed. You'll be using china till city hall 25 (city hall 25 is the max level) until that you'll be using whatever you want, but I'll give you some good civilization, first up is vikings if you main infantry units you'll wanna use viking civilization. It has 5% infantry attack, 3% counterattack damage and 10% Troop load. If you didn't know you can main only 1 troop Which is (Infantry, cavalry and archer. The other one is siege but that's useless but it is useful for farming.) if you are gonna start playing rise of kingdoms I suggest you watch tutorials of it.
