This tutorial demonstrates two different styles of freeform modeling: solid and surface.

I do organic sculpting with forms a lot, but in the past I always used solid form like quadball or box. Here I am trying something new (at least to my workflow): use surface (plane) to create a rough shape in box display first, then fine tune in the smooth display.

This new approach works in an outside-in fashion, as opposed to the previous inside-out method.

5:55 instead of working on closing the form surface, you can leave it open, and use PATCH (Surface > Create > Patch) tool to close each end. You will end up with 3 surfaces. Then you will have to stitch them together. Once you do that, they will become one solid object.
