Saucy chefs Pan cooked Jerk Chicken with Steamed Rice

Prep time:- 15 minutes (plus 1 hour to marinade)
Cooking time:- 15 minutes.
Serves 4
Ingredients:-
750g Chicken breast fillet
2 spring onions (chopped)
3tbs olive oil
4 cloves crushed garlic
2 finely chopped red chili’s
2tsp grated ginger
1tsp cinnamon
Half tsp nutmeg
Half tsp all spice
1tsp black pepper
1tsp thyme
2tbs coriander
2tbs dark soy sauce
2tbs honey
Juice of 1 lime
I diced mango
Half diced yellow pepper
Half diced red pepper
2 small cups long grain rice.
Water to cook
Method:-
Mix all the spices together along with 1tbs olive oil and the soy sauce, honey and herbs.
Cut the chicken breast into bite size pieces and marinate for 1 hour in the spice mix.
Place the rice in a saucepan with double the quantity of water. Add salt, bring to the boil, then
turn the heat down low, cover and cook for 15-20 minutes.
Heat the remaining olive oil in a pan and add the onion and peppers
Fry these for a couple of minutes and then add the garlic, chili peppers and the chicken mix.
Continue to stir fry until the chicken is cooked through.
Then add the chopped mango.
Cook through and then add the lime juice just before serving.
Check the rice has absorbed all the water and is cooked through.
Serve together garnished with fresh herbs
