In the first fight, it wasnt just Yama. The entire Gotei 13 at the time were ruthless mercenaries who would use any method to win. Honour was merely a word for them which held no value. Each of them were probably close to yama level. Yamamoto at 2k years old with one arm holding back to not destroy the soul society beat 80% of yhwach's powers. There were captains like unohana who spawnkilled zaraki(100 times over). This zaraki in turn was able to easily beat down 3 low level sternritters. Imagine 13 captains close to Yamamoto's strength or unohana's.

He used the clown to make Yamamoto waste energy then he steals his bankai cause he was afraid of a fair fight. Just like Aizen. Just like in the filler.
