Never ate one with pickles but it looks on point!
France has so many dishes that you'll never find "the national dish"!
Try the Blanquette, try the Bœuf Bourguignon...
Italia is the same, so many dishes!

Those tiny pickles are called Cornichons and OMG THEY’RE SO GOOD, idk why or what they put in it but they’re just better than normal pickles, we stock up on them every time we visit family in France

for Romania, please do sarmale with mamaliga (polenta). and eat it with cream (smantana, smetana), and optionally a hot pepper. you will probably find all the ingredients you need at an eastern european / Romanian shop. good luck!

I feel like foreigner know it more than the french. Not a lot of my friends ate it (though I cannot talk for all regions).

I'm very sceptical and somewhat hate the trend of influencers making contents where they are on a mission to taste cuisines from around the world, but with the approach of cooking it themselves. The taste won't be the same even if you follow the recipe exactly. The techniques that a true person of that nation use may be different and may influence the outcome a lot. It breaks my heart if a person tried a cuisine and ended up disliking it while in actuality it wasn't near authentic.

This is a better approach. Try it made by a true local or a cook that has done it many times before. Support their business along the way. I'm proud of you for trying this one out at a restaurant before attempting to make it yourself at home. At least you can match the flavor to memory. 👍

What type of beef did you use? Any time I try to do a stew with none minced beef it's always hard and rubbery ;;o;;
