A trick I learn from years of making albóndigas,
If you precooked the rice, only 10 minutes ( not fully cooked) then added to the meat the meatballs come super fluffy and at the end the rice is fully cooked without over cooking the meat !
Also put a bunch of cilantro wrapped up and cooking cloth so you can easily remove it when serving the soup
Cilantro just gives it a different spin of flavor

Guys everyone has their own ways of cooking. I have learned that every state of Mexico has their own way of cooking! Not saying this girl albondigas aren't good! But, hey maybe thats how they taught her. Made not be my taste but for someone else maybe.

I recommend adding the veggies last because they cook super quickly. Also cooking the carrots with the meat will make it sweet. First cook the meat then gradually add the veggies ❤

Instead of water how about beef broth..
Instead of cutting onion chile and cilantro, make a tomatillo salsa, use it when eating this amazing recipe
Adding scallions right before serving, will make perfect ❤

I was wondering why them balls looked pale asf, I like to fry mine up a bit until golden brown everywhere and then blend tomatoes like for a mexican soup, i then let them finish off cooking w the broth and veggies
