This recipe takes 5 minutes to whip up. All you need is 1 tablespoon of yogurt starter mixed with 1 cup of heavy cream. (I usually triple the recipe). Let it sit on the counter for 24 hours in a covered jar. Does not require any heat. After fermenting for 24 hours, whip with a hand blender until the buttermilk stops splattering and the butter sticks to the beaters. Cold-wash and fold as shown. Drip in a cheesecloth, and your butter is ready. Safe to keep on the counter for at least a week. Does not require refrigeration.
