Steaks get cooked to 175, roasts get cooked to 200. They were to thin for that high of a temp.
Also when they reach 175 put in a foil pan, add beef broth or apple juice and tent.

Take the over cooked one and slice it then put it in a container with a pint of beef stock or broth. Let sit in the fridge over night and then mix with sauteed peppers and onions, make tacos or sandwiches, reduce the excess broth with a knob of butter and use as a sauce

The reason why the pit boss swings more is how pellet grills work, they go full blast fan and control temps by adding pellets on a timer, the masterbuilt modulates fan speed dynamically to keep temperature stable.

Pro tip! I also have the Masterbuilt 560. I learned something early on which is use the center rack with a foil pan filled with water halfway on cast iron grates for long smokes. I did ribs and pork butt on the cast iron and both burnt bottom of meat. Also the bottom rack middle runs 35 degrees higher and middle rack center runs 20 cooler than what's dialed in. You're still learning your pit you will figure it out. What's cool about the Masterbuilt is you can cold smoke at 150 (load chunks of wood in the catch can) for fish, cheese and jerky and put a pizza stone in it and crank it to 700 for wood fired pizza. Pellet grills can't do that.

Well, you can’t win em all! Often called “the poor mans brisket”! Chuck is actually a great meat to BBQ! Just keep an eye on it, it can get overcooked easily! Thank you all for watching!

I always put chuck roast in a foil pan with beef stock at the 165 degree mark, foil cover and let it go to about 205-208 always tender and juicy

I bought a Pit Boss upright and loved the hell out of it. A couple months later, I bought a 560. I've only used the Pit Boss once since. Poor kid. I still love you, Pitty!

When using the masterbuilt, how often do you have to refill the charcoal chamber when low and slow cooking @ around 250⁰? Just wondering because If I am slow cooking a brisket I don't want to keep adding charcoal every couple hours on a 14 hours meat. I'm looking to buy one or the other and that's the deciding factor for me. Thanks

I had the master built 560 and still have my treager, did the same test several times with various meats and family and freinds almost always pick the pellet smoker for flavour. I prefer the pellet for convenience and build quality but that said my treager was twice as expensive.

I just got a pitboss 850 pro series and its been the best outdoor cooking experience ive ever had. The meat is tender, moist and smokey. Cooked a brisket to christen it. Beautiful and delicious. Cooked burgers on it, bologna "spicy" last night smoked, and tonight it was pork chops and a smoked bologna "non spicy". Couldnt ask for better results. Tomorrow its two wild caught smoked salmons. Cant wait.

I dig the video. I have a Camp Chef pellet grill, but have considered this masterbuilt as well. How does the fuel consumption compare? I get pellets like $8/20lbs, but they last a long time.

I wouldn't even consider purchasing another Masterbuilt brand. The Masterbuilt has quality issues that have been around for several years and rather than work to eliminate the issue, they choose to "grease the squeaky wheel". Due to the inability to heat adequately consistently, a huge opportunity to introduce food poisoning to your family and friends with one of these smokers is very likely. The biggest problem by far, is now "due to the coronavirus" you can't talk to anyone when you call for tech support. You have to submit an online form and someone contacts you via email, and It seems that there could possibly be a language barrier. #MasterbuiltIsJunk

yeah I recently purchased the masterbuilt 1050 I just got it last Friday I will unbox it this week I have a Traeger 22 inch pellet grill you mention temp swings my Traeger has that as well I have a kettle grill for my long cooks cause I like the flavor of real lump wood this caught my eye with the masterbuilt based on it being an offset hopper style wood charcoal grill can't wait to start using it!!

Even though it was over done you can slice it thin toss it in a bunch of diced veggies, sauté them together make some badass smoked fajitas/street tacos

Nice comparison video. The PB does add a little moisture when burning pellets due to higher moisture content over the charcoal so that could have contributed to it being juicier over the MB Chuck also.

One of the benefits to the Masterbuilt is grilling at higher temperatures give you A better flavor than the pellet grills. Smoking is close depending on how much wood you use in the master built. With grilling however, you have more of the charcoal/kettle grill flavor rather than just a Roasted flavor that the pellet grills give.
