as an italian it kinda irks me that people are like attacking people over not doing stuff in a traditional way. like, i can understand if someone is claiming to make an authentic dish but breaks the pasta, i’d get mad. but here, i’d think it’s fine for someone to break pasta for this dish. food and culture is meant to be shared and appreciated with others, so if one strays from a traditional way of preparation to suit a new dish’s style then so be it.

There is a reason why you don't break the pasta and it is that if you break it it loses texture, so just put it in the boiling water and let it sink into the water as it cooks, it shouldn't take more than a minute before you manage to submerge all. This ensures an al dente texture in addition to having more bite. Also, i feel that noodles were more appropriate for this recipe, as they pair better with natto.

I usually cry when i see people break it in half judt because it wont fit. It will always end up fitting, and broken pasta is always soggy, and you can no longer twirl it with your fork successfully!

Just stick the pasta in the boiling water and stir it for a moment abd the noodles will soften and you can fit them in without blaspheming them.
