Jicama is an uncommon vegetable to grow in your garden. Growing unusual vegetables is a passion of mine, and I always learn something new. Jicama is a root vegetable that tastes like something between an apple and a pear. It has a crispy texture that can be enjoyed raw, or cooked as a low-carb alternative to potatoes, and it's loaded with dietary fiber. There is also research that shows it has anti-inflammatory properties, a low glycemic load, and other health benefits.

I had some jicama I grew for lunch. I sliced it up put some mozzarella, and baked for 10 minutes at 350. I grew mine in 3 gallon grow bags.

Typically Central Americans don’t cook it. It’s most commonly eaten raw with lime and salt. It’s very delicious
