If I worked it out correctly, here is how it works: (hope it somewhat clear)
In English, all the amount of letters of each of the card names is either 10, 11, 12, 13, 14 or 15.
This trick will always work if the packet thickness (p) is less than or equal to the two times the amount of letters of the random card (r). So t <= 2r.
If we call the position of the card to be found (10D in the video) p, then here is what happens:

Step 1: selection is at the bottom: p = t
Step 2: r cards transferred from top to bottom, so selection is r cards higher than it was: p = t - r
Step 3: Now the selection is in the cards that are going to be counted, so since the counted cards are reversed and transferred to the bottom, the selection is now t - r cards from the bottom. This means that it is t - (t - r) + 1 = r + 1 cards from the top. So p = r + 1.
Step 4: Now for the last time remove r cards from the top. Then p = r + 1 - r = 1. P is the top card!

If your packet size is greater than 2r but smaller than 3r, you need to do the counting five times to make it work.

My initial attempts failed but to my total amazement this really works. I actually had one friend take a third of the deck and had another take half of the remaining cards and performed for two spectators at once. You can imagine the reactions. I will forward this video to a professional magician friend who I tried to explain the trick without a deck of cards available. He was really interested despite my miserable explanation. Now, I will have to keep a deck of cards on me just for this trick.

I just did this trick and took it up a level (well, I believe it got a greater reaction).
Got them to do 3 piles. Write down the bottom cards (to remember).
Got them to choose a card and did the 'ritual.'
Did the next 2 piles. Cool thing is, they could use their 'special' card again or choose something completely different.

The end was obviously revealing all 3 of their original cards. Mind blown! Doing the three piles adds sooo much more randomness.

Only tip is:
get them to deal into 3 piles, not just wing it by cutting roughly a third. Which nicely solves any issues Nick memtioned in his comment. ie you'll always have at least 17 cards in each pile so you wont run out when spelling. And also you'll know that the 3x ritual will work, as you won't have too many cards, even if you're only spelling out a ten letter card.

Final extra tip (purely for one more level of randomness)

When they've got say 15 or 16 in each pile (45-48 cards dealt) tell them that they can do whatever they want with the remainder.
eg discard them. Throw the lot on one pile. Unevenly distribute etc. Just that one extra subtle layer never hurts 😊

This does (likely) work every time. I just did it 10 times in a row and every time it works, my variation is this… I have the spectator select a random card of their free choice from the discarded 2/3 deck and that’s what we use. It works 100% of the time

It works, provided that the number of cards you count out by spelling out is at least half the total amount of cards (that roughly 1/3 of the whole deck).
For example, spelling 7 cards for a stack of 12 works. Spelling just 5 cards for that same set does not work.
Since spelling a card in English takes at least 10 letters, you're safe when taking no more than 20 cards, which is (slightly more than) 1/3 of a deck.

This is good! No slight of hand, so literally anyone can do it. I know a different version that uses 9 cards and works 100% of the time. I won't explain it all but 3 piles of 3 cards, someone chooses a pile, and their selection is the bottom one. The card is spelled out and the person's selected card is always the 5th one from the top.
