Gang Beasts should be on this list just for its weirdness and fun factor. Also, there was a game called Bust-A-Groove from PS1 where you matched arrow and button combos to dance better than your opponent and knock them out with powerup dance moves. Not sure it counts as fighting but it's super rare for its kind.
