Native Irishman here. I would really put emphasis on stepping outside of traditional tourist destinations. To get a true understanding of Ireland and its experiences you must visit the The West Coast from Moher in Clare to Acaill Island in Mayo. Conamara and the Arans and down to the Sceilig islands in Kerry. The Hill of Tara in Meath and the Hill of Uisneach in West Meath. Theres so much to see

I think u should visit cork the real capital blarney castle is a wonderful castle but i would also recommend west cork also journey around and visit some lesser known areas i would also recommend kanturk castle county cork and kilcrea abbey and across the way is an extremely great example of a castle also rock of cashel in Tipperary
