In my 7 years of home cooking, this is the first time my jaw drops at a recipe. Dear lord this is the most delicious trout I've ever had. The key ingredient to this recipe is the cooking of the shallots and garlic in the butter before going in the oven, and allowing them to cool before applying it on your fish so that you don't cook unevenly. Truly a masterpiece, 10/10. So good I subscribed!
