Palestinian Smoky Eggplant Dip (Mutabbal) | Sahtein!

Mutabbal: A gorgeous, smoky, garlicky eggplant dip that is sure to satisfy your dignified guests. This is a fun one to make in the summer on the grill or fire, or if you're in the city like me, pretend you are in the woods and do it on your gas stove. Once you get the hang of it, this cooking method is easy and so much fun. Can be vegan if you don't add yogurt!

This video was shot in summer 2020. Many more videos to come in 2022! Thanks for your patience this last year. It's been a crazy one - but we're ready for action now! What should I make next?
Cheers - xx N

Hello Nadia! Thank you for this video! My wife and I prepared it last night. The preparation was easy and went exactly as you said it would.. Even though your ingredient amount recommendations are a bit unconventional, we quickly understood that there is flexibility in the amounts used. We tasted it last night but we intend to feast on it today. I think a night of tempering in the refrigerator improves this kind of dish by allowing the flavors to meld. This was our first effort at making a Palestinian dish. It will not be our last!

Your channel is absolutely lovely. One of my favorite people in the world is Palestinian and I'm definitely going to be using your videos to help create food that he misses when he comes to visit.

Have you ever tried cutting into chunks and putting in air fryer? It comes out incredibly smoky and delicious. Also, doesn't need much input, very easy. I do this also for salads. Thank you for the recipe ❤

Some tips from my own experience:
1. Keep the eggplant whole, the steam created cooks the inner part efficiently (just don't forget to rotate frequently otherwise it may explode...)
2. Use a fork to mash, I like keeping the eggplant threads as a final texture. For garlic I just add zhugg

I made this to my friends. Everyone was wowed by it. Pretty good considering being a dude who can only cook 3 receipts. This is my fourth now.
You are amazing Nadia. صحتين وعافية
And thank you so much.

This is AMAZING!!!! I could eat it by itself with a spoon!! Made it for the first time tonight & even bought pomegranate molasses to drizzle. I never cared for eggplant until I tried this. Thank you!!

Hi habeebti, when I make babaghannouj I peel the eggplants in a bowl full of cold water, you keep the flavour and it’s quite quick, I learned it from my mom!

I like your version but just an fyi, I've used cashew yogurt, which works very much the same as dairy yogurt. I'm on plant based/vegan diet.

Yay! As a vegan, I would leave out the yogurt. Roasting the eggplant on the stove, I hadn't thought of that. Glad you are back.😀
