I would say never ice it. My dad did that once although he has little knowledge on how to store things so I was not surprised although I tasted it and it was flat, I guessed he had done that and he said he had. Cooling it in very low temperatures can affect the flavor although icing it seems to completely remove the taste. In fact we never put wine in the fridge, we have it in the basement in a cabinet where its cool in there (it may be 20 in our house and maybe 10 or 12 in the basement, in fact it can get colder in there on cold days, we dont heat it much. It does very well in that. I tried it and would suggest not doing that. Even beer gets ruined when you do that. It gets very flat and watered down, especially if it has been frozen and then re-melted. We never put wine or spirits (rum, gin, whisky or tequila/vodka) in the fridge. They are in a basement cabinet filing unit. Only beer does well in the refrigerator, and non of them frozen keeps the flavor
