This cut of Beef can be called
1. Scotch Fillet
2. Rib Eye Steak
3. Cube Roll
4. Centre Cut Steak
Reverse searing a large, thick steak to medium rare.
1. Heat your oven or BBQ to 120o C (BBQ needs to be indirect heat).
2. Season your meat and cook to an internal temp of 46 o C.
3. Remove from the oven/BBQ.
4. Heat your searing method. We use direct heat on our BBQ or a cast iron pan on a cooktop.
5. Once hot, sear the steak on both sides until it's caramelized. This should only be quick as the meat is cooked already.
Ribeye steaks mostly comprise the longissimus dorsi muscle but contain the complexes and spinalis muscles. The longissimus dorsi is also called the "eye of the ribeye." The spinalis is also called the "ribeye cap," the complex is a small muscle at the front of the ribeye that the butcher may trim off.
It is both flavorsome and tender, coming from the lightly worked upper rib cage area, which spans from the sixth to twelfth ribs of the cattle. Its marbling of fat makes it very good for fast and hot cooking.
