A ristretto shot of espresso is made when the coffee powder is compressed more and becomes less permiable. As a result, stronger but less coffee is extracted.

The shorter the shot the bitter the taste. Coffee is very bitter, the more concentrated it is the more bitter it will be. The long espresso shot( we also have normal and half which are lower than a long shot) is much lighter because it had more water.

As a Starbucks barista and former Costa Coffee barista I would say that at least the old Starbucks automatic espresso machines don’t pull single ristreto shots as well as long single shots. That is only available when pulling double shots. So you can’t actually order a long single or short shot at Starbucks or at least in the matter of your explanation as you would from a La marzocco or any other espresso machine with portafilters.

I think u mixed them up for ristretto the grind size is made finer to make it more bitter and for lungo the grind size is larger so that the water flows through faster
