I offer something I heard somewhere else, which is: Maybe the reason he sleeps so much is to keep getting the 10 extra HP to work with

This makes me want to make a mini comic so badly.
I take it like Sans has a chronic condition. He sleeps a lot to restore himself above maximum HP (since his bed probably is the comfiest for him), and other monsters are just very careful with him. The Underground is very safe post pacifist play through so you can see how he can manage, and monster attacks are weaker than a human attack, so a playful punch could hurt him, it wouldn’t kill him.
Though I suspect this is why Papyrus never can kill you, since he’s had to control his own strength from a young age (he’s relatively strong for a monster), so he’s developed his control more than an average monster.
I imagine it’s like having osteoporosis/osteoarthritis, where a bad fall can leave him bedridden.
