For me its italy, as since you start off at war, it gives the player a sort of tutorial in fighting a war, without it being a real serious war

Actually France is ez to play as long as you aren’t going to go to original timeline, I played France as starting country and I won every time

I actually love playing France. First couple of times I failed miserably but then managed to find a strat that works for me as a defensive player. It's easy to turn it into a fortress with the focus tree they have then just grind the axis down while focusing on Africa.
