Fresh Pea and Radish Salad with Burrata and Fresh Mint

1/2 cup pancetta, sauteed
3/4 cup sliced radishes
4 ounces sugar snap peas, sliced thinly (about 1 1/4 cups)
1 pound frozen peas, thawed
1/3 bunch mint leaves, torn (about 1/3 cup)
12 ounces Burrata cheese (you could also use feta)
Pinch kosher salt, more to taste
3 tablespoons extra virgin olive oil
Freshly ground black pepper to taste
Boiled egg sliced, optional

Recipe Steps
In a large bowl, toss together the pancetta, radishes, peas, sugar snaps and mint. Add Burrata and gently mix together if using small Burrata balls. If using one large ball there is no need to mix. Using a knife or a mortar and pestle, make a paste of the garlic and salt. Drizzle with the olive oil, and salt add pepper to taste. If desired, garnish with boiled egg Enjoy as a main dish or as a side dish with grilled meat or fish!
