OMG, I've not seen Sunday gravy like this in many years. I used to live with a family who was only 1 generation in this country. I learned that there's many variations to "gravy", depending upon what region their family's came from. I've also seen it made using "neck bones", veal shanks, etc. I just know it's beyond delicious. And your ratio of paste to tomato, whole, or crushed is spot on, not too thick, not too thin when finished cooking.

That is beautiful. I’ve never thought of using baking soda in a sauce. I’ve added it in sourdough to reduce the sourness but never thought about tomato sauce.

Good substitute for the ribs - Pork Jowl Bacon. You can find it at Walmart cheap as many people don't know what to do with it !
