In my experience, browning with mayo gives a weird flavor. I use a little oil in the pan and butter on the outside of the bread. I cover the pan to melt the cheese while the first side is browning. This way, I can have an ample amount of cheese with minimal risk of the sandwich falling apart when I flip it. I don't understand the reason for the butter on the inside of the sandwich... seems redundant, since there's already melted cheese in there.
