Puerto Rican stuffed sweet plantains is a classic Puerto Rican dish that will blow your socks off. If you’re a sucker for sweet and salty dishes then this recipe is going to be your new jam! The beef picadillo I used to stuff the plantains is seasoned to PERFECTION and is infinitely versatile. It can be made with ground turkey, chicken, pork, heck even lentils if ur a vegetarian. You can stuff it in the sweet plantains here like I did, but you can all use it to stuff tostones cups, empanadas, pastelon, fried mashed potato balls, the options are endless. It’s so good it can absolutely be eaten all by itself or on top of a mound of fluffy white rice.
The cheese in this recipe is optional but definitely recommended. I hope this recipe can become a regular in your household. Don’t forget the Malta India!

Ingredients & instructions

4 maduros (sweet plantain)
Puerto Rican white cheese ( if you can’t find this any cheese your prefer will work)
Mozzarella melting cheese

Beef Picadillo:
1 pound ground beef
7-10 ají dulce (can be found at your local Hispanic supermarket, optional)
7 culantro leaves (can be found at your local Hispanic supermarket, if not use more cilantro )
1/2 bunch of cilantro
1 red pepper diced
1 green pepper diced
1 medium onion Diced
Adobo
Onion powder
Garlic powder
1 dash Grace browning sauce
Pitted Olives + olive juice (to taste)
Juice of half a lime

PREHEAT OVEM TO 375F

1. Peel the sweet plantains and fry them in oil on medium high heat for about 12-15 minutes or until cooked through and tender
2. In a separate pan, sautée the onions and peppers on medium high heat
3. Add the ground beef, seasonings, herbs and browning sauce. Cook until browned.
4. Finish ground beef with olives and lime juice.
5. Make sure the cooked sweet plantains are cool enough to handle. With a knife make a vertical cut in the sweet plantain but be sure not to cut it entirely in half.
6. Spread the sweet plantain open like a canoe.
7. Stuff with cheese and ground beef.
8. Bake for 12-15 minutes at 375 or until cheese is golden brown.

The one thing about us puerto ricans and this is important for those doing our dishes is we do not measure things, cooking is within our souls, a little means about a tsb or half a tsp. When you make our food pay attention to what un poquito means (a little) Means, and assume in your memory if you saw a spoon or less. Because since we start cooking at 7 yrs of age, we never measure, it's in our blood, we sprinkle and add.

Now that I know how to make it, I WILL!
I was wondering if you ever make "pastelles"? I may be spelling it wrong but it sounds like "pah tell ay".
It's a seasoned meat mixture inside a plantain batter and wrapped up in banana leaves and tied like a little square package and then boiled.
When it's done, it looks like a kinish made out of gelatine.😅 You know what I'm talking about?
I know it's a lot of work, we only got it at Easter and Christmas cause it was so much work you had to make a lot of it!
Well, I'll keep watching your channel for it!
