How to protect from this? Disabling password authentication, using ed25519 -b 4096 and adding a passphrase to the ssh key would be enough?

In order to read the cracked password you need to specify the name of the hash file(in your case the name is "hash"). Saying that because I have noticed that in 9:40 you tried different names such as "passwords", "hashes", "cracked". Anyway, I didn't know about this john.pot file, thanks :)
