Thankfully you told the right time of curdling the paneer many youtubers say it only takes 5 to 10 minutes. When I was learning cooking I faced same problem with this but gradually learned by trying.

In Turkey we also have this cheese and it's called "peynir" which is pronounced similarly as paneer.

my favorite cheese right there!!! if you want a simpler yet a tasty thing out of paneer, just dice up paneer, squeeze few lemons in and then add some black salt and pepper then enjoy it as a salad XD

Paneer is favorite dairy product for Indian kids

Facts about cheese:
Its one of the oldest food in the world
Its started in a Mesapotania(i forgot the name) When the local farmer left the milk outside for a few hours and then the farmer noticed that it makes a soft thing wich now is called cheese

Omg yes!! My fav. My dad makes paneer! The only difference is that we use vinegar which adds a delish acidic/salty flavour! It is perfect with roti and a mini salad thing idk just try.
