Playing catch up in the garden. Harvesting tomatoes, onions, and potatoes. sharing a few things we are going to try to improve on for the garden next year, as well as the new way we have been processing our tomatoes. Really makes canning tomato sauce a lot easier and getting food from the gaden to the table.

Eric, your channel was one of the first homesteading channels I found several years ago (thanks to your wood heat videos!) and while I've found a bunch of others yours is still my favorite for how well you put them together, the love you have for your family, and the information you share. Glad u got one of those strainers I’m 70 now but we borrowed one when I was 5 yrs old . It was our job to turn the crank, it worked great . Then my dad bought one . They were all stainless steel then and called squeezo strainer . Throw the waste on your mulch pile and you get hundreds of free tomato plants

I grind my tomatoes up skins, seeds and all then let it sit for about 24 hours in a deep container and most of the water separates from the tomatoes (at the bottom of the container) and I siphon it off before processing them. Saves me a lot of boiling time to thicken them up.

I put my tomato sauce in the crockpot on low. I set the lid a little crooked so the moisture can escape. I can go do other things and when I come back in 6 hrs my tomato sauce is done.

I love my mill. I cook my tomatoes first then cool to process. You will get thicker sauce and more tomatoe doing so.

We use the same sauce maker... it is awesome for apple sauce too.. just quarter and blanch the apples ... run them through a couple of times ... skins, stems and all. Then feed the leftover skins and cores to your hens !!!😀

After you get your fresh sauce from the Victorio you can warm it up thoroughly (impt.) and then put it through a mesh sieve (looks like a screen). The liquid that comes out will be nearly clear and the stuff in the sieve will be quite thick, like paste. You can save a lot of time and stove fuel/electricity by sieving it, as well as save nutrients that aren't exposed to hours of heating. I add the seasonings before I sieve and warm them up also. The nearly clear liquid is delicious and I drink it or freeze it for use in soups or when I make rice. I'd rather use it than boil it off. Also you can use tomato "broth" and chicken broth together for a delicious taste instead of water when making rice.

We took the crank handle off our mill and put a arbor on the threads and attached the cordless drill to it. It takes the work out of it.

I love my squeezo, great for tomatoes and apples! We had bad potato bugs this year too and had the same thought to put the chickens out there after harvest. ~sarah

My Dad used to carry a big ol jackknife his whole life but I never like having the bulky thing in my pocket. I hate even having keys in my pocket so most of the time the keys are just left in a dash pocket in the car or truck and I take my chances with thieves, lol! But a couple years ago I started carrying a little 2 inch pocket knife and now, like you, I feel lost without it. I’ve misplaced it a few times but it always seems to come back! Yours probably will, too.

I have not had a Swiss army knife in years. I think the last one I had was pretty much the one you just bought. I think you just convince me to get another one lol. Also I love the Tomato Gadget - Mike

Put tomatoe sauce through fine mesh strainer before putting in pot to heat it up.
