another big indicator: setup always happens in an "island" in the middle of the screen with the iOS default wallpaper blurred in the background on real devices, and the apps here still act like it's a phone (ex. no dual-pane appearance)

The Genshin impact test is what did it for me. That looked like it was running on a potato phone. Genshin usually runs very well on apple devices (unless it's REALLY old).

Genshin runs MUCH smoother than that lol. I just got a Tab S10 Ultra, but even on my old Tab S7+ I could run Genshin on HIGH/ULTRA EVERYTHING and get 60FPS stable
