Easy Asparagus Pesto Pasta

ASPARAGUS SPRING PEA PENNE [RECIPE]

One of my favourite ways to use basil pesto! You can use canned pesto or freshly made, doesn’t matter. It’s such an easy pasta dish and comes together in less than 20 minutes.

Per serving
100 grams penne
~8 spears of asparagus
~1/2 cup fresh peas
-1 heaping tablespoon of basil pesto

Method:
-add pasta to salted boiling water, and set timer to designated timing on the pasta box
-this penne took 12 minutes to cook till Al dente, so I set the timer for 12 minutes
-sauté peas when there’s 8 minutes remaining (season with S&P)
-sauté asparagus when there’s 4 minutes remaining ( season with S&P)
-ladle in some pasta water especially if the pan gets dry. This will also help distribute the pesto well.
-remove veg from the heat, and then ladle in pasta once cooked
-mix in basil pesto until evenly mixed
-top with more parm (optional)

TIP
-basil pesto is very delicate and degrades when exposed to heat. It will lose flavour if added too early or while the heat is still on. The residual heat should heat the pesto enough to mix well, even if the pesto is refrigerated.
-Parmesan does not do well on heat either, and parm is one of the ingredients in a traditional basil pesto. Since it’s a hard cheese, it can stick to the pan if heated too much.
