So that you can fly Hobbico planes with your JR, without installing your own receiver.

Ok - so I've got a JR DSX9 - 30 model memory with 'model match', so I can't possibly fly the wrong plane on the wrong settings.

All the new Horizon Hobby/E-Flite/ParkZone models on the market come with with the 'bind and fly' option, so why would I want change my Tx over to a Tx-R setup?

This sounds a couple of years late to me - JR/Spektrum have already done this...
