I read the passage in the manga regarding the slave girl and honestly didn't interpret it that harshly. You can interpret it harshly yes, but also manga Sanji was always very careful to treat ladies well. So I think it's more of a 'let's buy her so she's free again' instead of ' let's buy her and keep her as a slave'.
He also said Nami, can we buy her too. This also clearly refers to Kami and he didn't want to have or see her as a slave.

In French version, Sanji was originally named Sandy, like in the 2000's version, but now it's Sanji like for English and Japanese version :)

Sanji knowing about Devil Fruits might not be a plot hole, because 1. Knowing about devil fruits does not mean you knows they are cursed. 2. He knows they are cursed, but at least in the panel you showed, he never said what that curse is, which might imply the encyclopedia never stated what the curse is either. 3. He said they didn’t seem real, and if they don’t even seem real to him, why even bother remembering their existence, let alone what the curse would be.

I don't think the Sanji plot hole is really a plot hole, or at least it doesn't have to be. It says he read the devil fruit encyclopedia which lists off every known devil fruit, but that doesn't necessarily mean he knew devil fruit users couldn't swim.
