Quite a few YT car channels fall into this trap. They get popular doing the hooptie thing, then they make more money and start getting into the more expensive cars. Then they start to lose some of their audience because they're not doing what attracted them in the first place.

As an outsider looking in, you're livin' the dream. Please don't put it all at risk by further extending your debt to earnings ratio. Debt becomes your "Master" and that is an awfully dark place to be. You have plenty of time to get the 300 SL. Instead, please consider working to consolidate and build on the wonderful life you've built for yourself. Then when you're financially ready, go buy the best example you can find.

The YouTube car channel environment is volatile right now, you just plopped a massive wad of cash on buying and fixing up a property., and, most importantly, you have two children you are providing for and a fiance too that isn't going to be married to a broke ass guy eating ramen in an apartment when he loses his ass on a crazy dream. Spend a year or two getting your financials and life arrangement sorted. Then you can better assess the possibilities with this.
