In Texas, you can legally carry a .44 magnum, but you can't legally carry a knife with a seven inch blade. Or a Bowie knife, even though Jim Bowie died trying to make Texas free.

In my state, I can legally carry a .44 magnum, an At-15, and a short barreled shotgun on public streets in the capital city, but if I'm also carrying a butterfly knife, I can go to jail.

It's almost funny.

In Canada, most knives that are banned (spring assisted, gravity/centrifugal assisted like Balisongs and whatnot) are illegal because they're too dangerous for their user, from what I've read, which is honestly the most Canadian thing ever.

The reason that balisong (most common of the so-called "gravity knives") and switchblade style knives are illegal in so many areas of the U.S. is because they were associated with fears of gang violence.

The astute reader might point out that handguns are also heavily associated with gang violence, and wonder why handguns are not as widely illegal as these categories of knives. The alert reader may then wonder why permits can be had to carry a handgun concealed, but these knives remain illegal for open carry or concealed carry with no recourse, and indeed no permit can be had to carry any knife concealed. The answer to that is that knives are affordable but handguns tend to be more expensive, so regulating knives while allowing handguns favours one class of people over the other.

I think it's unconstitutional to give a knife intrinsic purpose or intent. Doesn't matter what others see it's intended purpose for it's not a weapon until someone uses it as such. It's sort of one of the founding concepts of our country that we prosecute criminals for comitting crimes not arresting innocent people for carrying a knife.
